Breakfast Mmm Mushrooms - 249 calories

Wanting to hit my 5 a day, get some fibre in my diet & use up what's in the fridge, I woke up early this morning and decided to experiment. We'd talked about stuffed mushrooms in the huddles and I'd bought some but not got round to making any, too many meal ideas, not enough meal times!


I decided to make them for breakfast, here's my ingredients, of course you can experiment and add your own and if there's more than you needs feeding, just multiply the ingredients.


2 slices J.James (Sainsbury's) back bacon - diced - 77 calories

2 large Portobello mushrooms 34 calories

2 slices of yellow pepper - diced - 4 calories

2 slices of red pepper - diced - 4 calories

4 cherry tomatoes - diced - 12 calories

2 spring onions - diced - 4 calories

handful spinach - 6 calories

25 grams of grated cheese (I used the parmesan) 104 calories

3 sprays of spray light 3 calories

Now I'm trying to cut my food bill because it's got ridiculous, I bought J.James Bacon Bacon, 8 slices for 83p and I didn't notice a difference to any other back bacon that costs twice the price!


Firstly take the stalk out of the mushroom (dice and add to other diced veg), and spray mushrooms with oil or spray light, pop in oven for 10 minutes on 200 (180 fan) degrees / Gas mark 6/7.


Put all diced ingredients into a frying pan and cook to your taste, approx 5 mins.

Add spinach and allow to wilt.

Turn grill on (or you could pop it back in oven) Put the mushrooms in a silver tray (I use recycled ones from food I've bought), if your mushrooms are wet, use a piece of kitchen towel to soak up the juices. Top with the loveliness from the frying pan.


Sprinkle the cheese over the top and grill until brown.

Serve and enjoy!

I had mine with eggs, but you can have yours with whatever you want, be nice with scrambled egg, on toast or even on their own.
