Chicken Chow Mein

Updated: Jun 21, 2021

The sesame oil really does make a difference to the taste, it's worth investing in. This recipe is also a great way to use up the leftover chicken from a roast - if there is any!

Total Calories 1020, feeds 4 = 255 calories each

200g cooked chicken breast (cut into thin strips) (306 calories)

1 tbsp rapeseed oil (135 calories)

¼ tsp white pepper

¼ tsp chopped garlic

250g dried egg noodles (463 calories)

100g Bean sprouts (47 calories)

½ small onion (sliced) (10 calories)

½ tsp salt

1 tbsp dark soy sauce (15 calories)

1 tsp light soy sauce (3 calories)

1 tsp sesame oil (41 calories)

Cook noodles as per packet instructions. Clean wok, heat wok until hot and slightly smoky. Add 1 tablespoon oil. Add the chicken and onions and stir-fry for 30 seconds. Turn to low heat and add the garlic and stir-fry for another 15 seconds.

Now add the bean sprouts and noodles. Stir-fry for 4-5 minutes or until the noodles are soft. Add the salt, dark soy sauce and light soy sauce. Add more soy sauce if you like a stronger flavour.

Stir-fry for another minute. Finally add the pepper and sesame oil and stir in.
