Teriyaki Chicken

Feeds 4, 210 calories per serving

4 tablespoons teriyaki sauce (164 calories)

1 tbsp light soy sauce (12 calories)

½ tsp toasted sesame oil (20 calories)

500g chicken breast fillet, skinless, cut into strips (530 calories)

2 tsps sesame seeds (50 calories)

Calorie controlled cooking spray

250g asparagus tips (53 calories)

3cm piece ginger, finely chopped (8 cals)

2 spring onions, trimmed and sliced on the diagonal (4 calories)

In a shallow dish mix together the teriyaki marinade, soy sauce and sesame oil. Add the chicken and stir until covered, put in fridge, covered for half hour to marinade. Meanwhile put the sesame seeds in a dry frying pan or wok and dry fry for 3 mins over a medium heat, shaking the pan occasionally, until light golden. Tip seeds into a small bowl and set aside. Remove chicken from marinade (keeping marinade for later) and mist with cooking spray. Put in pan and stir fry for 5 or 6 minutes until light golden all over. Remove from pan and set aside. Mist the pay with cooking spray and stir fry the asparagus for 3 minutes, then add the chicken, chicken and marinade. Stir fry for a further 1-2 minutes until the sauce has reduced and thickened. Serve sprinkled with sesame seeds and spring onions.
